It’s BBQ season and that got us talking at the office about our favorite pot luck dishes. My go-to is an easy, cold side dish perfect for hot days. You don’t even have to turn on the oven and this recipe is Certified Delicious – and it better be because one of Scout’s owners will be trying it out on her friends this weekend.
Sesame, Garlic Green Beans
2 lbs. green beans, trimmed
1/3 cup low sodium soy sauce
2-3 cloves garlic, finely minced
3 tbsp. sesame oil
1/2 tbsp. sugar
1) Blanch green beans in a large pot of boiling water for 4-5 minutes max. Then toss them in ice bath to halt any additional cooking. Drain.
2) Mix (or shake) all ingredients in a bowl (or a large ziploc bag, if you really want things clean and easy). Keep on mixing until beans are completely coated.
3) Cool in fridge for an hour. Toss again. Cool in fridge for another hour!
4) Toss and serve. Enjoy nice and cold.
